Ingredients

4 bison filet mignon steaks (6-8 oz each)

2 tablespoons olive oil or melted butter

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

Optional: 1 tablespoon of balsamic vinegar or red wine for added flavor

Optional: 1 tablespoon of butter for finishing

Pat the bison filet mignon steaks dry with a paper towel. Rub them with olive oil or melted butter, then season generously with salt, pepper, minced garlic, rosemary, and thyme.

Preheat a heavy skillet or cast-iron pan over medium-high heat until hot.

Place the bison steaks in the hot pan and sear for 2-3 minutes on each side, creating a nice crust. For added flavor, deglaze the pan with balsamic vinegar or red wine after searing.

Reduce the heat to medium and continue cooking the steaks for an additional 2-4 minutes per side, depending on your preferred level of doneness (125°F for rare, 135°F for medium-rare, 145°F for medium).

Remove the steaks from the pan and place them on a cutting board. Add a tablespoon of butter on top of each steak, then loosely tent with foil. Let them rest for 5 minutes to allow the juices to redistribute.
